Abroath Smokies

Serves:  6

Ingredients:

600 gms (2 pairs) Abroath Smokies
150 ml double cream
1 Tablespoon horseradish cream
Pinch of cayenne pepper
Ground black pepper
90 gms grated cheddar cheese
½ squeezed lemon
Small bunch of chopped parsley

Method:

  1. Pre-heat oven to 350 F/175C
  2. Flake fish off bones into a bowl.
  3. Add rest of ingredients and mix well with a fork.
  4. Spoon the mixture into individual ramekin dishes.
  5. Sprinkle a layer of cheese over the top and bake in a hot oven for about 10 mins.
  6. Before serving sprinkle with parsley.

Serve with buttered toast triangles. One of our favourite starters!
