Roasted Jersey royals with baby roots
Serves: 4
Ingredients:
2 tbsp sherry vinegar
4 cloves garlic, finely chopped
6 tbsp olive oil
400g Jersey Royal new potatoes, scrubbed
400g small fresh beetroot, trimmed and scrubbed
400g baby carrots, trimmed and washed
Method:
- Halve any larger potatoes and cut the beetroot into quarters.
- Put the potatoes, beetroot and carrots in a roasting tin and scatter over the garlic.
- Drizzle with the oil and season.
- Roast for 30 minutes until tender.
- Drain the oil and pop back into the oven to crisp, sprinkle with vinegar when removed from the oven again and serve
