Roasted Jersey royals with baby roots

Serves: 4

Ingredients:

2 tbsp sherry vinegar
4 cloves garlic, finely chopped
6 tbsp olive oil
400g Jersey Royal new potatoes, scrubbed
400g small fresh beetroot, trimmed and scrubbed
400g baby carrots, trimmed and washed

Method:

  1. Halve any larger potatoes and cut the beetroot into quarters.
  2. Put the potatoes, beetroot and carrots in a roasting tin and scatter over the garlic.
  3. Drizzle with the oil and season.
  4. Roast for 30 minutes until tender.
  5. Drain the oil and pop back into the oven to crisp, sprinkle with vinegar when removed from the oven again and serve
